Cheesy carrot flatbreads

Here’s a tasty recipe for Cheesy Carrot Flatbreads—crispy on the outside, soft on the inside, with a savory cheesy flavor and a hint of sweetness from carrots.


Ingredients (makes 4 flatbreads)

  • 1 cup grated carrots (about 2 medium carrots)
  • 1 cup all-purpose flour (or whole wheat flour)
  • ½ cup shredded cheese (cheddar, mozzarella, or a mix)
  • 2 tbsp plain yogurt or sour cream
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp dried herbs (optional: oregano, thyme, or mixed herbs)
  • 2–3 tbsp olive oil or melted butter (for cooking)

Instructions

  1. Prepare the dough
    • In a large bowl, mix the flour, baking powder, salt, pepper, and herbs.
    • Stir in the grated carrots and shredded cheese.
    • Add yogurt and 3–4 tbsp water (or more if needed) to form a soft, slightly sticky dough.
  2. Shape the flatbreads
    • Divide the dough into 4 equal portions.
    • Lightly flour your surface and roll each portion into a round or oval about ¼ inch thick.
  3. Cook the flatbreads
    • Heat a non-stick skillet or frying pan over medium heat.
    • Brush lightly with olive oil.
    • Cook each flatbread for 2–3 minutes per side, until golden and cooked through.
  4. Serve warm
    • Enjoy as a snack, with a dip, or alongside soups and salads.

  • You can add garlic powder or finely chopped herbs for extra flavor.
  • Swap yogurt for milk if you prefer a slightly lighter dough.
  • Optional: sprinkle a little extra cheese on top while cooking for a cheesy crust.
