Cinnamon Sugar Soft Pretzels

Ingredients

Dough

  • 1 ½ cups warm water (about 110°F / 43°C)
  • 2 ¼ tsp active dry yeast (1 packet)
  • 1 tbsp granulated sugar
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp unsalted butter, melted

Baking Soda Bath

  • ⅓ cup baking soda
  • 4 cups water

Topping

  • 4 tbsp unsalted butter, melted
  • ½ cup granulated sugar
  • 1–2 tsp ground cinnamon (to taste)

Instructions

  1. Activate the yeast
    In a large bowl, mix warm water, yeast, and sugar. Let sit 5–10 minutes until foamy.
  2. Make the dough
    Add flour, salt, and melted butter. Mix until a dough forms, then knead 5–7 minutes until smooth and elastic (by hand or mixer).
  3. First rise
    Place dough in a lightly greased bowl, cover, and let rise 45–60 minutes until doubled in size.
  4. Shape pretzels
    Preheat oven to 425°F (220°C).
    Divide dough into 8–10 pieces. Roll each into a long rope (about 20–24 inches) and twist into pretzel shapes.
  5. Baking soda bath
    Bring water to a gentle boil, add baking soda.
    Drop each pretzel in for 20–30 seconds, remove, and place on parchment-lined baking sheets.
  6. Bake
    Bake for 12–15 minutes until puffed and lightly golden.
  7. Cinnamon sugar finish
    Brush warm pretzels generously with melted butter.
    Mix sugar and cinnamon, then coat pretzels while still warm.

Tips & Variations

  • Extra soft: Brush with butter again after coating.
  • Cream cheese dip: Whipped cream cheese + powdered sugar + vanilla.
  • Shortcut: Dough can be made ahead and refrigerated overnight.
