Here’s an easy, juicy slow cooker chicken breast recipe that works for meals all week.

Simple Slow Cooker Chicken Breast

Ingredients

  • 2–3 lb (900 g–1.3 kg) boneless, skinless chicken breasts
  • 1 cup chicken broth (or water)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Optional: 1 tsp Italian seasoning or taco seasoning

Instructions

  1. Add liquid: Pour chicken broth into the slow cooker.
  2. Season chicken: Sprinkle both sides of the chicken breasts with all seasonings.
  3. Cook: Place chicken in the slow cooker in a single layer.
    • LOW: 3–4 hours
    • HIGH: 1½–2½ hours
      Cook just until the chicken reaches 165°F (74°C).
  4. Rest & shred/slice: Let rest 5 minutes, then shred or slice as desired.
  5. Moisten: Spoon a little of the cooking liquid back over the chicken.

Tips for Juicy Chicken

  • Don’t overcook—chicken breast dries out quickly.
  • Use LOW if possible.
  • If breasts are very thick, cook time may increase slightly.

Easy Flavor Variations

  • BBQ: Add ½ cup BBQ sauce, reduce broth to ½ cup.
  • Mexican: Add taco seasoning + ½ cup salsa.
  • Creamy: Stir in ½ cup cream cheese during the last 30 minutes.
  • Lemon Garlic: Add juice of 1 lemon + 2 cloves garlic.
