Ingredients (4 servings)

Chicken Ricotta Meatballs

  • 1 lb ground chicken
  • ½ cup ricotta cheese
  • ½ cup breadcrumbs or panko
  • 1 large egg
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • ¼ cup grated Parmesan
  • 2 tbsp fresh parsley or basil, chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • Olive oil, for cooking

Garlic Spinach Orzo

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • 1 tbsp olive oil or butter
  • 3–4 cups fresh spinach
  • ¼ cup grated Parmesan
  • Zest of ½ lemon (optional)
  • Salt and black pepper, to taste

Instructions

1. Make the meatballs

  1. Preheat oven to 400°F (205°C). Line a baking sheet.
  2. In a bowl, gently mix all meatball ingredients until just combined.
  3. Roll into golf-ball-sized meatballs and place on baking sheet.
  4. Lightly brush or spray with olive oil.
  5. Bake 18–22 minutes, until cooked through (165°F internal).

(Optional: broil 1–2 minutes at the end for light browning.)


2. Cook the orzo

  1. In a skillet or saucepan, heat olive oil over medium heat.
  2. Add garlic and cook 30 seconds until fragrant.
  3. Stir in orzo and toast lightly for 1 minute.
  4. Add chicken broth and bring to a simmer.
  5. Cook 8–10 minutes, stirring occasionally, until orzo is tender and creamy.
  6. Stir in spinach until wilted.
  7. Finish with Parmesan, lemon zest, salt, and pepper.

3. Serve

  • Spoon orzo onto plates.
  • Top with lemony chicken ricotta meatballs.
  • Finish with extra herbs, Parmesan, and a squeeze of lemon.

  • Extra sauce: Add a splash of cream or more broth to the orzo
  • Gluten-free: Use GF breadcrumbs and rice orzo
  • Mediterranean twist: Add sun-dried tomatoes or olives
  • Make ahead: Meatballs freeze beautifully
