Here’s an authentic Mexican Carne Asada Marinade—bold, citrusy, and perfect for grilling or searing. This is the classic street-style flavor that lets the beef shine.


Mexican Carne Asada Marinade

Ingredients (for 2–3 lbs steak)

  • ½ cup fresh orange juice
  • ¼ cup fresh lime juice
  • ¼ cup olive oil
  • 3–4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder (or ancho chili powder)
  • ½ tsp smoked paprika
  • ½ tsp oregano (Mexican oregano if possible)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • Optional additions:
    • 2 tbsp soy sauce or Maggi seasoning (taquería-style depth)
    • 1–2 tbsp chopped cilantro
    • 1 minced jalapeño or serrano (for heat)

  • Skirt steak (most traditional)
  • Flank steak
  • Thin-cut sirloin

Instructions

  1. Mix marinade
    Whisk all ingredients together in a bowl.
  2. Marinate steak
    Place steak in a zip-top bag or shallow dish.
    Pour marinade over meat and coat well.
    Marinate 2–6 hours in the refrigerator
    (Do not exceed 8 hours—citrus can make meat mushy).
  3. Cook
    Remove steak from marinade and pat lightly dry.
    Grill over high heat 3–5 minutes per side (depending on thickness) until nicely charred.
  4. Rest & slice
    Rest 5–10 minutes.
    Slice against the grain for tenderness.

  • Serve with rice, beans, and grilled onions
  • Add to burritos, quesadillas, or carne asada fries
