Here is a flavor-packed Green Chile Cast Iron Enchiladas recipe — easy, cheesy, and baked right in your cast iron skillet for the BEST crispy-edged tortillas and bubbling green chile sauce! 🌶️🧀🔥


🌶️🍳 Green Chile Cast Iron Enchiladas

Ingredients (Serves 4–6)

For the Filling

  • 2 cups cooked, shredded chicken
    (or shredded beef, pork, or sautéed veggies — your choice)
  • 1 cup shredded cheese (Monterey Jack, Pepper Jack, or cheddar)
  • 1 small onion, finely diced
  • 1–2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt & pepper to taste

For the Sauce

  • 1 (15–16 oz) can green enchilada sauce
  • 1 (4 oz) can diced green chiles
  • ¼ cup sour cream or heavy cream (optional for creamier sauce)

Tortillas & Topping

  • 8–10 corn tortillas (or small flour tortillas)
  • 1–2 cups shredded cheese (for topping)
  • Fresh cilantro (optional)
  • Lime wedges (optional)

⭐ Instructions

1. Preheat & Prep

  • Preheat oven to 375°F (190°C).
  • Heat a 12-inch cast iron skillet over medium heat.

2. Make the filling

  1. In the skillet, add oil, onions, and cook until softened (3–4 minutes).
  2. Stir in garlic and cook 30 seconds.
  3. Add shredded chicken, cumin, chili powder, salt, and pepper.
  4. Mix in 1 cup cheese.
  5. Remove filling from skillet and set aside.

3. Prepare the sauce

In a bowl, mix:

  • Green enchilada sauce
  • Diced green chiles
  • Sour cream (optional)

Set aside.


4. Warm tortillas

To keep them from cracking:

  • Heat tortillas in a damp towel in the microwave for 30 seconds
    or quickly warm each in a dry skillet.

5. Assemble enchiladas

  1. Add a thin layer of green chile sauce to the bottom of the cast iron pan.
  2. Fill each tortilla with 2–3 tbsp of the chicken filling.
  3. Roll tightly and place seam-side down in the skillet.
  4. Continue until skillet is full.
  5. Pour the remaining green sauce over the top.
  6. Sprinkle liberally with cheese.

6. Bake

  • Bake uncovered 20–25 minutes, until hot and bubbly.
  • Broil the top for 2–3 minutes if you want extra browning.

7. Serve

Top with:

  • Cilantro
  • Lime juice
  • Avocado slices
  • Sour cream
  • Diced tomatoes or onions

Serve hot right from the skillet!
