Sausage and peppers

Here’s a classic sausage and peppers recipe—simple, hearty, and great on its own or in a sandwich.

Ingredients (serves 4)

  • 1½–2 lb Italian sausage (sweet, hot, or mixed)
  • 3 bell peppers (mix of red, yellow, green), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp dried basil (optional)
  • Red pepper flakes (optional)
  • Salt & black pepper
  • ½ cup crushed tomatoes or marinara (optional, for saucier version)
  • Hoagie rolls or crusty bread (optional)

Instructions

  1. Brown the sausage
    Heat 1 tbsp olive oil in a large skillet over medium heat. Brown sausages on all sides (5–7 minutes). Remove and set aside. Slice if desired.
  2. Cook the veggies
    Add remaining olive oil. Sauté onions and peppers with a pinch of salt until soft and lightly caramelized, about 8–10 minutes.
  3. Add garlic & seasoning
    Stir in garlic, oregano, basil, black pepper, and red pepper flakes. Cook 30 seconds until fragrant.
  4. Combine & simmer
    Return sausage to the pan. Add crushed tomatoes/marinara if using. Cover and simmer 10–15 minutes until sausages are cooked through.
  5. Serve
    Taste and adjust seasoning. Serve as-is, over pasta, or stuffed into toasted rolls.

Tips & Variations

  • Oven method: Roast everything at 400°F (205°C) for ~35–40 minutes, stirring once.
  • Extra flavor: Splash of balsamic vinegar or white wine at the end.
  • Low-carb: Serve over cauliflower rice or with a side salad.
