Here’s a classic sausage and peppers recipe—simple, hearty, and great on its own or in a sandwich.
Ingredients (serves 4)
- 1½–2 lb Italian sausage (sweet, hot, or mixed)
- 3 bell peppers (mix of red, yellow, green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp dried basil (optional)
- Red pepper flakes (optional)
- Salt & black pepper
- ½ cup crushed tomatoes or marinara (optional, for saucier version)
- Hoagie rolls or crusty bread (optional)
Instructions
- Brown the sausage
Heat 1 tbsp olive oil in a large skillet over medium heat. Brown sausages on all sides (5–7 minutes). Remove and set aside. Slice if desired. - Cook the veggies
Add remaining olive oil. Sauté onions and peppers with a pinch of salt until soft and lightly caramelized, about 8–10 minutes. - Add garlic & seasoning
Stir in garlic, oregano, basil, black pepper, and red pepper flakes. Cook 30 seconds until fragrant. - Combine & simmer
Return sausage to the pan. Add crushed tomatoes/marinara if using. Cover and simmer 10–15 minutes until sausages are cooked through. - Serve
Taste and adjust seasoning. Serve as-is, over pasta, or stuffed into toasted rolls.
Tips & Variations
- Oven method: Roast everything at 400°F (205°C) for ~35–40 minutes, stirring once.
- Extra flavor: Splash of balsamic vinegar or white wine at the end.
