Here’s a classic homemade Strawberry Pie — fresh, bright, and not overly sweet 🍓🥧
This is the traditional version with a fresh strawberry filling and a clear glaze.


Classic Strawberry Pie

Ingredients

Crust

  • 1 9-inch pie crust, baked and cooled
    (homemade or store-bought)

Filling

  • 1½ quarts fresh strawberries (about 2½–3 lb)
  • ¾ cup granulated sugar
  • 3 tbsp cornstarch
  • ½ cup water
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

1. Prep strawberries

  • Wash, hull, and halve strawberries
  • Mash about 1 cup of them

2. Make the glaze

  • In a saucepan, whisk sugar, cornstarch, salt, and water
  • Add mashed strawberries
  • Cook over medium heat, stirring constantly, until thick and clear (5–7 min)
  • Remove from heat, stir in lemon juice and vanilla

3. Assemble

  • Arrange fresh strawberry halves in cooled crust
  • Pour warm glaze evenly over berries

4. Chill

  • Refrigerate at least 3–4 hours until set

Serve With

  • Fresh whipped cream
  • Vanilla ice cream
  • A mint garnish (optional)

Tips for the Best Strawberry Pie

  • Use ripe, fragrant strawberries
  • Don’t skip chilling — it fully sets the pie
  • For extra shine, brush berries lightly before pouring glaze
