Easy slow cooker soup recipe

Here’s a super easy, dump-and-go slow cooker soup that’s cozy, filling, and hard to mess up 😊


Easy Slow Cooker Chicken & Vegetable Soup

Ingredients:

  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 2 cups frozen mixed vegetables
  • 1 tsp Italian seasoning (or just salt & pepper)

Instructions:

  1. Add everything to the slow cooker
    Place chicken in the bottom. Pour in broth and tomatoes, then add frozen vegetables and seasoning.
  2. Cook
    • LOW: 6–8 hours
    • HIGH: 3–4 hours
  3. Shred & serve
    Shred the chicken right in the slow cooker with two forks. Taste and adjust seasoning.

Optional Easy Upgrades (totally optional):

  • Add egg noodles or rice during the last 30–45 minutes
  • Stir in a little cream or cream cheese for a creamy soup
  • Add garlic powder, onion powder, or a bay leaf for extra flavor
