Shrimp, Corn, Potatoes, and Smoked Sausage Foil Pack

Ingredients (Serves 4)

  • 1 lb medium shrimp, peeled & deveined
  • 4 small red potatoes, diced into 1-inch pieces
  • 2 ears corn, cut into 2-inch rounds (or 1½ cups frozen corn)
  • 12 oz smoked sausage, sliced into ½-inch pieces
  • 3 tbsp olive oil or melted butter
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (optional, for heat)
  • Salt & black pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat & Prep
    Preheat oven to 400°F (200°C) or prepare a hot grill. Cut foil sheets (~12–14 inches long) for individual packs.
  2. Prepare Potatoes
    Toss diced potatoes with 1 tbsp olive oil, salt, and pepper. Microwave 3–4 minutes or parboil 5 minutes to slightly soften.
  3. Assemble Foil Packs
    • Place potatoes, corn, and sausage in the center of each foil sheet.
    • Drizzle with remaining olive oil, sprinkle garlic, smoked paprika, cayenne, salt, and pepper.
    • Top with shrimp.
  4. Seal & Cook
    Fold foil over ingredients and seal edges tightly.

    • Oven: Bake 20–25 minutes
    • Grill: Cook over medium heat 15–20 minutes
    • Check that shrimp are pink and potatoes are tender.
  5. Serve
    Open packs carefully, sprinkle with fresh parsley, and serve with lemon wedges.

Tips

  • 🦐 Shrimp cooks quickly — don’t overcook. Add shrimp in the last 10 minutes if your potatoes take longer.
  • 🌽 Use frozen corn for convenience.
  • 🔥 Foil packs can be cooked directly on charcoal, grill grates, or in the oven.

Variations

  • 🥔 Swap red potatoes for sweet potatoes or baby Yukon golds
  • 🌶️ Add sliced bell peppers or jalapeños for extra flavor
  • 🥩 Use andouille sausage or kielbasa for a spicier kick
  • 🧈 For extra richness, dot each pack with butter before sealing
