Here’s a light, flavorful Lemon-Herb Baked Cod recipe — flaky, fresh, and ready in under 25 minutes 🍋🐟


Lemon-Herb Baked Cod

Ingredients

  • 1½ lb cod fillets (fresh or thawed)
  • 2 tbsp olive oil or melted butter
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano or thyme
  • 1 tbsp fresh parsley or dill, chopped
  • ½ tsp paprika (optional)
  • Salt & black pepper, to taste
  • Lemon slices (optional, for topping)

Instructions

  1. Preheat oven to 400°F (205°C).
  2. Pat cod dry and place in a lightly greased baking dish.
  3. In a small bowl, mix olive oil, lemon zest, lemon juice, garlic, herbs, paprika, salt, and pepper.
  4. Spoon mixture evenly over cod.
  5. Top with lemon slices if desired.
  6. Bake 12–15 minutes, until fish flakes easily with a fork.
  7. Optional: Broil 1–2 minutes for lightly browned edges.

Tips for Perfect Cod

  • 🐟 Cod is done at 145°F (63°C) internal temp.
  • 🍋 Don’t overbake or it will dry out.
  • 🌿 Fresh herbs give the best flavor.

Serving Ideas

  • With roasted potatoes or rice
  • Alongside asparagus, green beans, or zucchini
  • Flaked over a fresh salad

Variations

  • 🧈 Creamy: add 2 tbsp butter and 2 tbsp cream
