Slow Cooker Crock Pot Corned Beef
Ingredients
- 3β4 lb corned beef brisket (with spice packet)
- 4 cups water or beef broth
- 1 lb baby potatoes (halved if large)
- 3β4 carrots, cut into chunks
- 1 onion, quartered
- 3 cloves garlic, smashed
- 1 bay leaf (optional)
- Cabbage wedges (optional, added later)
Instructions
- Rinse corned beef under cold water (optional, reduces saltiness).
- Place onions, garlic, and bay leaf in the bottom of the slow cooker.
- Add corned beef fat side up and sprinkle with spice packet.
- Pour in water or broth until brisket is just covered.
- Cover and cook:
- LOW: 8β10 hours
- HIGH: 4β5 hours
- Add potatoes and carrots during the last 3 hours (LOW) or last 2 hours (HIGH).
- Add cabbage during the last 60β90 minutes.
To Serve
- Remove brisket and rest 10 minutes.
- Slice against the grain.
