Slow Cooker Crock Pot Corned Beef

Ingredients

  • 3–4 lb corned beef brisket (with spice packet)
  • 4 cups water or beef broth
  • 1 lb baby potatoes (halved if large)
  • 3–4 carrots, cut into chunks
  • 1 onion, quartered
  • 3 cloves garlic, smashed
  • 1 bay leaf (optional)
  • Cabbage wedges (optional, added later)

Instructions

  1. Rinse corned beef under cold water (optional, reduces saltiness).
  2. Place onions, garlic, and bay leaf in the bottom of the slow cooker.
  3. Add corned beef fat side up and sprinkle with spice packet.
  4. Pour in water or broth until brisket is just covered.
  5. Cover and cook:
    • LOW: 8–10 hours
    • HIGH: 4–5 hours
  6. Add potatoes and carrots during the last 3 hours (LOW) or last 2 hours (HIGH).
  7. Add cabbage during the last 60–90 minutes.

To Serve

  1. Remove brisket and rest 10 minutes.
  2. Slice against the grain.
  3. Serve with vegetables and cooking liquid.
