Here’s a simple, classic strawberry ice cream recipe you can make at home 🍓🍨

Homemade Strawberry Ice Cream

Ingredients

  • 2 cups fresh strawberries (hulled and chopped)

  • ¾ cup sugar (divided)

  • 1 cup whole milk

  • 2 cups heavy cream

  • 1 tsp vanilla extract

  • Pinch of salt

  • 1 tsp lemon juice (optional, boosts strawberry flavor)

Instructions

  1. Prepare the strawberries

    • Mix chopped strawberries with ½ cup sugar and lemon juice.

    • Let sit 20–30 minutes until juicy.

    • Mash slightly or blend if you want smoother ice cream.

  2. Make the base

    • In a bowl, whisk milk and remaining ¼ cup sugar until dissolved.

    • Stir in heavy cream, vanilla, salt, and the strawberry mixture.

  3. Chill

    • Cover and refrigerate for at least 2 hours (overnight is best).

  4. Churn

    • Pour into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes).

  5. Freeze

    • Transfer to a container and freeze 2–4 hours for firmer texture.

No Ice Cream Maker?

  • Pour the mixture into a freezer-safe container.

  • Freeze, stirring every 30 minutes for 3–4 hours to break up ice crystals.

Tips

  • For chunky strawberry ice cream, fold in extra diced strawberries after churning.

  • For extra creamy, replace ½ cup milk with more cream.

  • For vegan, swap dairy with full-fat coconut milk.
