🥢 Mongolian Ground Beef Noodles

Ingredients (2–3 servings)

  • 8 oz (225 g) egg noodles, spaghetti, or ramen noodles
  • 1 lb (450 g) ground beef
  • 3–4 cloves garlic, minced
  • 1 tsp ginger, minced (optional)
  • 3 green onions, chopped (reserve some for garnish)
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 2 tbsp hoisin sauce (optional, for sweetness)
  • 1–2 tsp sesame oil
  • 1–2 tsp vegetable oil for cooking
  • Optional: red pepper flakes for spice

Instructions

  1. Cook noodles
    Boil noodles according to package instructions. Drain and set aside.
  2. Cook beef
    Heat oil in a large skillet or wok over medium-high heat.
    Add ground beef, cook until browned. Drain excess fat if needed.
  3. Add aromatics
    Stir in garlic, ginger, and white parts of green onions. Cook 1–2 minutes until fragrant.
  4. Make the sauce
    In a small bowl, mix soy sauce, brown sugar, hoisin sauce (if using), and sesame oil. Pour over beef.
    Simmer 2–3 minutes until sauce thickens slightly.
  5. Combine with noodles
    Add cooked noodles to the pan, tossing to coat evenly with sauce and beef. Cook 1–2 more minutes.
  6. Serve
    Garnish with green onion tops, sesame seeds, or a drizzle of extra sesame oil.

  • Use hoisin or oyster sauce for a deeper flavor.
