Here’s an easy flourless chickpea bread you can make with simple ingredients 🌱
(It’s naturally gluten-free and high in protein.)
Flourless Chickpea Bread (Blender Recipe)
Ingredients
- 1 can (15 oz / ~400 g) chickpeas, drained and rinsed
- 2 large eggs
- 2 tablespoons olive oil
- 1 teaspoon baking powder
- ½ teaspoon salt
- Optional flavor add-ins:
- 1 teaspoon garlic powder or onion powder
- Herbs (rosemary, thyme)
- Seeds (sesame, sunflower) on top
Instructions
- Preheat oven to 175°C / 350°F. Grease or line a small loaf pan.
- Blend everything (except toppings) in a blender or food processor until completely smooth.
- Pour batter into the prepared pan and smooth the top.
- Add toppings if using.
- Bake for 35–45 minutes, until the top is firm and a toothpick comes out mostly clean.
- Cool for at least 15 minutes before slicing (it firms up as it cools).
Texture & Taste
- Soft and slightly dense, similar to savory quick bread
- Mild chickpea flavor (garlic/herbs help balance it)
Variations
- Cheesy: add ½ cup grated cheese
- Vegan: replace eggs with ½ cup aquafaba + 1 tablespoon cornstarch
- Flatbread style: pour thinner and bake 20–25 minutes
