Flourless chickpea bread

Here’s an easy flourless chickpea bread you can make with simple ingredients 🌱
(It’s naturally gluten-free and high in protein.)

Flourless Chickpea Bread (Blender Recipe)

Ingredients

  • 1 can (15 oz / ~400 g) chickpeas, drained and rinsed
  • 2 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Optional flavor add-ins:
    • 1 teaspoon garlic powder or onion powder
    • Herbs (rosemary, thyme)
    • Seeds (sesame, sunflower) on top

Instructions

  1. Preheat oven to 175°C / 350°F. Grease or line a small loaf pan.
  2. Blend everything (except toppings) in a blender or food processor until completely smooth.
  3. Pour batter into the prepared pan and smooth the top.
  4. Add toppings if using.
  5. Bake for 35–45 minutes, until the top is firm and a toothpick comes out mostly clean.
  6. Cool for at least 15 minutes before slicing (it firms up as it cools).

Texture & Taste

  • Soft and slightly dense, similar to savory quick bread
  • Mild chickpea flavor (garlic/herbs help balance it)

Variations

  • Cheesy: add ½ cup grated cheese
  • Vegan: replace eggs with ½ cup aquafaba + 1 tablespoon cornstarch
  • Flatbread style: pour thinner and bake 20–25 minutes
