Ingredients:

  • 2 medium zucchini, sliced into ¼-inch rounds
  • ½ cup (50 g) grated Parmesan or cheddar cheese
  • ½ tsp garlic powder (optional)
  • Salt and pepper, to taste
  • 2–3 tbsp olive oil or butter
  • Optional: fresh parsley or chives for garnish

Instructions:

  1. Prep the zucchini:
    • Slice the zucchini into even rounds. Pat them dry with a paper towel to remove excess moisture—this helps them crisp up.
  2. Season and coat:
    • Sprinkle salt, pepper, and garlic powder on both sides of the rounds.
    • Press a little grated cheese onto the top of each round.
  3. Pan-fry:
    • Heat olive oil or butter in a non-stick skillet over medium heat.
    • Add zucchini rounds in a single layer (work in batches if needed).
    • Cook 2–3 minutes per side, until golden brown and the cheese is melted and slightly crispy.
  4. Serve:
    • Transfer to a plate lined with paper towels to drain any excess oil.
    • Garnish with fresh parsley or chives and serve warm.

💡 Tips for Extra Crispy Rounds:

  • Sprinkle a tiny bit of flour or breadcrumbs on the zucchini before adding cheese for a crunchier texture.
  • Use a mix of cheeses like Parmesan + mozzarella for a gooey and flavorful result.
