Here’s a Crockpot Cheesy Potatoes recipe 🧀🥔—rich, creamy, and perfect for potlucks or an easy side dish.


Crockpot Cheesy Potatoes

Ingredients (Serves 6–8)

  • 32 oz frozen hash browns (cubed or shredded, thawed)
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom)
  • 1 cup sour cream
  • ¼ cup butter, melted
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  1. Mix ingredients
    • In a large bowl, combine hash browns, cheese, soup, sour cream, melted butter, garlic powder, onion powder, salt, and pepper.
  2. Slow cook
    • Lightly grease the crockpot.
    • Add mixture and spread evenly.
    • Cover and cook:
      • LOW: 4–5 hours
      • HIGH: 2–3 hours
    • Stir once halfway if possible.
  3. Serve
    • Once hot and bubbly, stir and serve.

Tips & Variations

  • 🥓 Add cooked bacon or diced ham
  • 🧅 Mix in sautéed onions or green onions
  • 🧀 Use a blend of cheddar, Colby Jack, or Velveeta
  • 🌶 Add diced green chiles for a little kick
