Sweet Potato Rocambole with Minced Meat

Ingredients (Serves 4–6)

Sweet Potato Base

  • 2½ lbs (about 1.2 kg) sweet potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1 egg
  • ½ cup grated cheese (mozzarella or cheddar)
  • Salt and pepper, to taste

Minced Meat Filling

  • 1 lb (500 g) ground beef (or beef/pork mix)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste or ½ cup tomato sauce
  • Salt and pepper, to taste
  • Optional seasonings: paprika, cumin, Italian seasoning
  • Optional add-ins: chopped parsley, olives, peas

Instructions

  1. Cook the sweet potatoes
    • Boil sweet potatoes in salted water until very tender (about 15–20 minutes).
    • Drain well and mash until smooth.
    • Mix in butter, egg, cheese, salt, and pepper. Let cool slightly.
  2. Prepare the meat filling
    • Heat olive oil in a skillet over medium heat.
    • Sauté onion until soft, then add garlic.
    • Add ground meat and cook until browned.
    • Stir in tomato paste/sauce and seasonings.
    • Simmer 5 minutes, then remove from heat.
  3. Assemble the rocambole
    • Preheat oven to 375°F (190°C).
    • Line a baking sheet with parchment paper.
    • Spread sweet potato mash into a rectangle about ½-inch thick.
    • Spread minced meat evenly over the sweet potato layer.
  4. Roll it up
    • Using the parchment to help, gently roll into a log (like a jelly roll), seam-side down.
  5. Bake
    • Bake 25–30 minutes until set and lightly golden on top.
  6. Serve
    • Let rest 5–10 minutes, then slice and serve.
