Ingredients (Serves 4–6)

  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked rice (white, brown, or a mix)
  • 2 cups broccoli florets, steamed or blanched
  • 1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • ½ cup bread crumbs or crushed crackers (optional topping)
  • 2 tablespoons butter, melted (for topping, optional)

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C).
    • Grease a 9×13-inch baking dish.
  2. Mix casserole filling
    • In a large bowl, combine chicken, rice, broccoli, ¾ cup of the shredded cheese, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
    • Stir until well combined.
  3. Assemble in baking dish
    • Spread mixture evenly in the prepared baking dish.
    • Top with remaining cheese.
    • Optional: mix breadcrumbs with melted butter and sprinkle on top for extra crunch.
  4. Bake
    • Bake 25–30 minutes, until the casserole is bubbly and the top is golden.
  5. Serve
    • Let cool 5 minutes before serving.
    • Serve hot as a complete meal.
