Spinach Mushroom Orzo

Ingredients

  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ small onion or shallot, finely chopped
  • 2 cups vegetable or chicken broth
  • 2 cups fresh spinach
  • Salt & black pepper, to taste
  • ¼ tsp red pepper flakes (optional)
  • ¼ cup grated Parmesan cheese (optional)
  • 1 tbsp butter or lemon juice (optional, for finishing)

Instructions

  1. Sauté vegetables:
    Heat olive oil in a skillet over medium heat. Add onion and mushrooms. Cook 5–7 minutes until mushrooms are browned.
  2. Add garlic & orzo:
    Stir in garlic and orzo; cook 1 minute to lightly toast.
  3. Simmer:
    Pour in broth. Bring to a simmer, cover, and cook 8–10 minutes, stirring occasionally, until orzo is tender and liquid is absorbed.
  4. Finish:
    Stir in spinach until wilted. Season with salt, pepper, and red pepper flakes.
  5. Serve:
    Remove from heat. Stir in Parmesan and butter or lemon juice if using.

Variations

  • Creamy: Stir in ¼ cup cream or cream cheese
  • Protein add-in: Chicken, shrimp, or chickpeas
  • Extra flavor: Add thyme, rosemary, or sun-dried tomatoes

Serving Ideas
