Ingredients:

  • 1 cup butterscotch chips
  • 1 cup peanut butter (creamy works best)
  • 3 cups chow mein noodles (or crispy rice cereal for a variation)
  • Optional: 1 tsp vanilla extract
  • Optional: pinch of salt (if using unsalted peanut butter)

Instructions:

  1. Prep a baking sheet: Line a baking sheet with wax paper or parchment paper.
  2. Melt the chips and peanut butter:
    • In a microwave-safe bowl, combine the butterscotch chips and peanut butter.
    • Microwave in 30-second intervals, stirring in between, until smooth.
    • (Alternatively, melt on the stovetop in a saucepan over low heat.)
  3. Mix in the noodles: Add the chow mein noodles and gently stir until all noodles are coated in the peanut butter–butterscotch mixture.
  4. Form the haystacks: Using a spoon, drop small mounds of the mixture onto the prepared baking sheet.
  5. Set: Let them cool at room temperature for about 30–60 minutes until firm. You can also refrigerate for faster setting.

Tips:

  • For extra flavor, sprinkle a tiny bit of sea salt on top before they set.
  • You can mix in mini chocolate chips or coconut flakes for a twist.
  • Make sure not to stir too roughly, or the noodles might break and make them mushy.
