Cranberry orange bread

Here’s a delicious, easy Cranberry Orange Bread that’s moist, bright, and perfect for breakfast or a snack 🍊🍞


🍊 Cranberry Orange Bread

🛒 Ingredients

  • 2 cups all-purpose flour

  • ¾ cup sugar

  • 1½ teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • Zest of 1 large orange

  • ¾ cup fresh orange juice

  • ⅓ cup vegetable oil (or melted butter)

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1 cup cranberries (fresh or frozen; if frozen, don’t thaw)


👩‍🍳 Instructions

  1. Preheat oven to 175°C / 350°F. Grease a loaf pan.

  2. Mix dry ingredients
    In a bowl, whisk flour, sugar, baking powder, baking soda, salt, and orange zest.

  3. Mix wet ingredients
    In another bowl, whisk orange juice, oil, egg, and vanilla.

  4. Combine
    Add wet ingredients to dry ingredients and stir just until combined.
    Gently fold in cranberries.

  5. Bake
    Pour batter into the pan and smooth the top.
    Bake for 50–55 minutes, or until a toothpick comes out clean.

  6. Cool
    Let cool in the pan for 10 minutes, then transfer to a rack.


✨ Optional Orange Glaze

Mix:

  • ½ cup powdered sugar

  • 1–2 tablespoons orange juice

Drizzle over cooled bread.


💡 Tips

  • Toss cranberries in 1 tablespoon of flour to prevent sinking

  • For sweeter bread, use dried cranberries instead of fresh

  • Store covered at room temperature for 2 days or refrigerate up to 5 days
