Ingredients

Pie Filling

  • 2 cups mashed sweet potatoes (about 2 medium)
  • ¾ cup granulated sugar
  • ½ cup evaporated milk
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt

Crust

  • 1 unbaked 9-inch pie crust (homemade or store-bought)

Instructions

  1. Prepare sweet potatoes
    • Peel and boil sweet potatoes until fork-tender, or bake at 400°F until soft.
    • Mash until smooth (no lumps).
  2. Preheat oven to 350°F (175°C).
  3. In a large bowl, whisk sugar, eggs, evaporated milk, melted butter, vanilla, spices, and salt.
  4. Stir in mashed sweet potatoes until creamy and smooth.
  5. Pour filling into unbaked pie crust.
  6. Bake 50–55 minutes, or until the center is set and a knife comes out clean.
  7. Cool completely before slicing (it firms up as it cools).
