🥕 Carrot Pound Cake

Ingredients

Cake

  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 cup unsalted butter, softened
  • 1½ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups grated carrots (about 3 medium)
  • ½ cup chopped walnuts or pecans (optional)

Cream Cheese Glaze

  • 4 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1–2 teaspoons milk (if needed for drizzling consistency)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or bundt pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in grated carrots and nuts if using.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake 50–60 minutes (loaf) or 1 hour (bundt), until a toothpick inserted comes out clean.
  9. Let cake cool completely before glazing.

Cream Cheese Glaze

  1. Beat cream cheese until smooth.
  2. Add powdered sugar and vanilla.
  3. Stir in milk 1 teaspoon at a time until pourable but thick.
  4. Drizzle over cooled cake.
