Ingredients
Pie Crust

Instructions
- Make the crust

Divide into two discs, wrap, and chill 1 hour. - Prepare the filling
Peel, core, and slice apples.
Toss with sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla. - Assemble the pie
Preheat oven to 425°F (220°C).
Roll out one dough disc and place in a 9-inch pie dish.
Add apple filling and dot with butter.
Roll out second disc, place on top, seal edges, and cut vents. - Bake
Bake at 425°F for 15 minutes, then reduce to 350°F (175°C) and bake 40–45 minutes more, until golden and bubbly. - Cool
Let pie cool at least 2 hours before slicing.
